Spinach & Chive Linguine + Mushroom Garlic Butter Sauce
1 package of trader joe’s spinach and chive linguine
1 package of crimini mushrooms, cleaned, chopped and sliced
2 cloves of garlic, crushed
2 tablespoons of extra virgin olive oil
3 tablespoons of grass-fed butter, salted
fresh ground black pepper
parsley, fresh finely chopped or dried
Heat skillet medium-high and add 1 tablespoon of olive oil then mushrooms. Sprinkle with sea salt. Add mushrooms and mix. Add freshly ground black pepper.
In a large pot, bring water to a boil for pasta. Once the water is at a rolling bowl, add pasta. Cook pasta as the directions on the package state.
Turn your skillet down to medium and add butter. Add salt for taste. Add parsley and remaining olive oil to skillet. Remove skillet from heat. Stir sauce until mushrooms are full immersed.
Toss noodles. In a large pasta bowl add noodles. Top with mushrooms and garlic, then spoon butter sauce over mushrooms and pasta.
Garnish with parsley and serve.
Adding a freshly grated hard parmesan cheese would change the whole vibe of this dish.
Squeezing fresh lemon juice with bring out different flavors and creaminess in the sauce.

Baby bella or portobello mushrooms can be used if crimini is not available.
